Pumpkin and oatmeal cookies

Preparation time: 1 hour and 10 minutes 🕖

Ingredients:  

  • 400 g. of cooked pumpkin 
  • 70 g. of oatmeal flour
  • of oatmeal sparkles
  • 2 sugar spoons
  • 1 egg
  • 1 cinnamon teaspoonful 

Preparation:

  1. Peel the pumpkin, cut it into pieces and place it in the oven at 200ÂșC for 20-35 minutes, until it is soft enough to crush it. If we bake it too much, it would release a lot of water and it is something that we do not want. Take it out and let it cool down.
  2. Beat the egg with the sugar in a bowl. 
  3. Then add the pumpkin and beat again until integrated.
  4. Then add the oatmeal and cinnamon and mix.
  5. Make balls using two spoons to work the dough and place them on a lined baking tray. We crush them to give them a cookie shape and take them to the oven.
  6. Bake for 20 minutes in a preheated oven at 190ÂșC. 
  7. Take the cookies out, let them cool down and enjoy then with friend and family for holidays 🍁
